Do you guys know Jackie Sobon? She runs one of my favorite blogs, Vegan Yack Attack, and is an amazing photographer. Vegan Bowl Attack is her very first book and I'm so glad I get to share her recipe for Hearts of Palm Vegan "Fish" Taco Bowl with you today. She uses hearts of palm to replace the seafood, and I love the texture. You can also get it in a regular grocery store making it easier to get your hands on than jackfruit for some of you. It's a perfect recipe for a hot summer ... Read More about Hearts of Palm Vegan Fish Taco Bowl from Vegan Bowl Attack

Gluten-Free Lemon Blueberry Belgian Waffles
It's finally Friday! I got back from a long vacation to Orlando that may have included some of allergy-friendly vegan waffles in the shape of Mickey Mouse. I'll share more about my trip with you in a post later, but it was hot, fun, and delicious. I'm a huge fan of summer berries and was lucky enough to get some organic blueberries in my CSA this week. Luckily, I have a recipe for Gluten-Free Lemon Blueberry Belgian Waffles from OATrageous Oatmeals. To make it truly gluten-free, as always, ... Vegan Slow Cooker Corn Chowder with Green Chilies for 2
Fresh corn has started to appear in my CSA box. We eat it straight on the cob for the first few meals, then once that's out of our system I can start cooking with it too. This vegan crockpot corn chowder is the perfect meal when you pair it with a hearty salad. This recipe is from my book, Vegan Slow Cooking for Two and Fair Winds is letting me share it with you today. One of my favorite things about using fresh corn is having the cob itself to flavor broths. It's awesome to use in risotto ... Read More about Vegan Slow Cooker Corn Chowder with Green Chilies for 2
Easy Blender Almond And Great Northern Bean Fondue
This deceptively simple dip fits into the grooviest '70s fondue party and works just as well as a weeknight meal. Another great way to dress it up is to mix in some green or puréed veggies, which you can vary each time you make it. What Do You Mean by White Beans? I find that so many white beans have the same cooked consistency and lovely neutral flavor. Cannelini, navy, Great Northern, etc., can all be used in this recipe. Can I Leave Out the Almonds? You can try using oats ... Read More about Easy Blender Almond And Great Northern Bean Fondue
Savory Southwest Teff and Steel-Cut Oats
The cold front has me craving warm porridge in the morning and I thought I should make a nice savory one for dinner too. This recipe adds in whole grain teff to a traditional savory steel-cut oat. This Savory Southwest Teff and Steel-Cut Oats makes a great base for a 1 bowl meal, but can be stuffed inside a burrito too! Vegan Slow Cooker Creamy Indian Lentils and Kidney Beans
Some weeks are just so busy. That usually means it's time for me to start making dinner in the slow cooker. These Creamy Indian Lentils and Kidney Beans are one of my favorite dishes and one of my first choices when I can't find a lot of time to spend in the kitchen. This dish is so easy to make. You just throw in most of the ingredients in your 3 1/2 or 4-quart slow cooker and you can go to work while it cooks for 8 to 9 hours on low. When you get home, just stir in a few things and it's ... Vegan Instant Pot Lentils and Rice with Rutabaga
I've been sick for the past few days and that's no fun at all. But at least having an Instant Pot can make it a little better. A girl still has to eat and Lentils and Rice with Rutabaga is a good one to make when you don't have the energy to stand in front of the stove. You can make this even less hands on by substituting onion powder and granulated garlic so you don't even have to saute anything. Just dump in all the ingredients and about 1 teaspoon each of the onion powder and ... Read More about Vegan Instant Pot Lentils and Rice with Rutabaga

Vegan Instant Pot Cranberry Bean, Millet and Bulgur Chili
I used to always keep a can of vegan chili in the pantry, but with this Vegan Instant Pot Cranberry Bean, Millet and Bulgur Chili now I just grab a portion from the freezer to use. It's so much cheaper! This makes a big batch and I always freeze the leftovers in 1 1/2 cups which is about the same amount that's in a standard can. This is similar to my small slow cooker recipe Lots of Beans and Grains Slow Cooker Chili, so if you don't have an Instant Pot you can skip over there ...
