The kinds of whole grain teff: Ivory and Brown
There are two different varieties of teff flour, ivory and brown. You can use either one in both savory or sweet recipes and can be used in a wide variety of recipes that call for flour or cake mix.
Where can I buy it?
It can be found at most health food stores or coops, high-end supermarkets, and online. I usually use the brand, Maskel Teff or Bob’s Red Mill.

Is teff grain the same as teff flour?
Teff grain is the starting point of the flour, once ground it becomes the flour. With teff being the tiniest grain in the world it’s better to grind it in a spice grinder than a regular Vitamix dry blender.
What does teff taste like?
Teff flour is a fine-tasting flour with many uses. It has a wonderful malty molasses-like distinctive flavor. Brown teff flour has an earthy, hazelnut taste, while white teff flour adds a sweet flavor similar to chestnuts.

The health benefits of teff
Teff is known for its low glycemic index which means that it doesn’t cause your blood sugar levels to spike as other flours do. Teff is a superfood meaning that it’s high in vitamins and minerals too.
It also contains no gluten or dairy products, making it an ideal flour choice for those with allergies or sensitivities of any kind.
Can you substitute it?
Yes, but it will affect the texture and flavor, so you will have to experiment rather than sub it one for one. Some common substitutions for teff flour are millet flour, sorghum flour, rice flour, quinoa flour, or oat flour.
If you are not gluten intolerant you can substitute regular wheat flour or other whole grain flour.

How to store it
While you can store teff flour in your pantry, it will last much longer in the fridge or the freezer.

You can really make any baked good with teff flour, just like you can veganize recipes you can make a gluten-free version.
