Twice Air-Fried Vegan Stuffed Idaho® Potatoes from Your Air Fryer

The only thing better than a baked potato is a baked potato filled with a cheesy mash and baked again. In this recipe we’re going to ditch the oven and do it all in our air fryer! The air fryer makes the whole cooking process go faster and crisps it up in the process. You can mix in any of your favorite herbs or spices and even a little shredded vegan cheese if you want.

Ingredients

  • 2 large Idaho® Russet Baking Potatoes
  • 1 to 2 teaspoons olive oil leave out to make oil free
  • 1/4 cup unsweetened vegan yogurt
  • 1/4 cup unsweetened nondairy milk
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt sub your favorite salt free substitute to make salt free
  • 1/4 teaspoon pepper
  • 1 cup chopped spinach or kale

Optional Topping Ingredients:

  • 1/4 cup unsweetened vegan yogurt
  • Smoked salt and pepper
  • Chopped chives parsley or other favorite fresh herb

Instructions

  • Rub each potato with oil on all sides.
  • Preheat your air fryer to 390° unless your model doesn’t require it. Once it’s hot, add the potatoes to your air fryer basket.
  • Set the cooking time to 30 minutes and when the time is up, turn the potatoes over and cook for 30 more minutes.
  • Note: Depending on the size of your potatoes you may need to cook an additional 10 to 20 minutes. You’ll know that they are ready when you can pierce it easily with a fork.
  • Let the potatoes cool enough that you can touch them without burning yourself.
  • Cut each potato in half lengthwise and carefully scoop out the middle of the potato while leaving enough to create a stable shell of the potato skin and a thin layer of the white part.
  • Mash the scooped potato, vegan yogurt, nondairy milk, nutritional yeast, salt and pepper until smooth.
  • Stir in the chopped spinach and fill the potato shells with the mixture.
  • Depending on the size of your air fryer, you may be able to cook all 4 halves at the same time or you may have to cook 2 of them at a time.
  • Cook on 350 degrees (or as close as your air fryer can be set to that) for 5 minutes.
  • Serve with the topping options of your choice and enjoy!

    These sound delish and I can’t wait to try them. I’ve decided since the potatoes take so long to cook, I can do these in one of two ways. 1. I can precook the potatoes (baking extras) and then do the stuffing on another day. (baked potatoes with dinner tonight ) 2.I can start the potatoes in the microwave and finish baking the potatoes in the airfryer. I can then stuff and finish in the airfryer. Dinner tonight.
    I love your books. Clean, simple and tasty meals! I buy cookbooks like others buy novels but I never miss (and I use) one of your books. A joy!!!

    Like to suggest a tweak: Since Air Fryers have such a limited life span, (we’ve owned several) I recommend both from a longevity perspective and a taste perspective to steam the potato first in the Instant Pot, then the second round Air Fryer. The inside will be more moist and the outside crispy.

    For those unfamiliar with the life span issue, (excluding the Breville) when you first get an air fryer it takes less temperature and shorter times. As the appliance gets older, you will notice that the temps need to go up to keep the time the same, then later it will also require longer cook times.

    We cut our own potatoes into french fries (because Organic French Fries have more oil than potatoes when you combine all the different kinds (3-4 kinds) of oil), so we use the air fryer almost daily. Because of this, we have notice this trend across 3 of the top four brands; The Breville is too new to make that determination.
