Slow Cooker Chickpea Vegetable Tagine - Whole Food Plant Based No Oil
This heartwarming Moroccan Vegetable Tagine is more than just a meal; it’s an experience. Slightly sweet, a touch spicy, and incredibly comforting, it’s perfect for using up whatever vegetables you have on hand. Let’s get cooking!
Ingredients
- 1 medium potato , diced
- 1 medium sweet potato , diced
- 1 red bell pepper , diced (sub any color bell pepper)
- 2 medium carrots , sliced
- 1 cup eggplant , diced
- 1/2 cup diced apricots
- 1 (15.5 oz) can chickpeas ,drained
- 1 1/2 teaspoons coriander
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon cardamom
- 1/2 teaspoon cinnamon
- 1 teaspoon harissa optional, adjust for spice preference
- 1 1/2 cups water
- 2 tablespoons tomato paste
- 2 bouillon cubes
- 2 teaspoons minced garlic
- 1 Lemon zest strip , 2-3 inches long
Instructions
Prep the Veggies:
- In your slow cooker, add the potato, sweet potato, bell pepper, carrots, eggplant, diced apricots, and chickpeas. Mix them well.
Add the Spices:
- Sprinkle the coriander, cumin, smoked paprika, cardamom, and cinnamon over the veggies. Adjust harissa to taste, starting with 1/2 teaspoon.
Boost the Flavor:
- Pour in 1 1/2 cups of water, add tomato paste, bouillon cubes, and minced garlic. Toss in the lemon zest strip.
Mix It Up:
- Stir everything until the tomato paste and spices are evenly distributed.
Slow Cook:
- Cover and cook on low for 7-9 hours, or on high for 4-5 hours. Check halfway through and add a little more water if it looks dry.
Serve:
- Traditionally served over couscous, but try it with rice or riced cauliflower for a change. Taste and adjust seasoning as needed.
