It’s always seems more exciting when Vegan Mofo is going on –  or it that just me? Did you see Cara’s Raw Peppermint Patties this morning? What about Veganosaurus’ Raw Fig and Cinnamon Ice Cream? And I can’t wait until I get time to cook Vegan Richa’s Mango and Hatch Chile Pizza.

This past weekend it actually cooled off and finally felt like fall. I was even wearing a sweater when I was writing on the deck. I also made a steaming pot of rose tea since I could finally be assured I wouldn’t break out in a sweat.

Today, however, it’s hot again. My thermos of hot tea is languishing off to the side and all I can think about is a nice, cold drink. Better yet, a cocktail to help me transition from web developer to recipe developer. I have a ton of writing to do tonight!Spiked Strawberry Mint Lemonade

I made my first strawberry vodka infusion with this year’s first spring strawberries. The result is a pinkish-red with a great smell and a distinct strawberry flavor. So much better than store-bought.

Making infusions are so much fun and easier than you think. I even bought a few cool stackable bottles to put the finished product in.

To make your own all you need is a wide mouthed jar (like a canning jar) with a lid, fresh strawberries and your favorite vodka. You can take a look at the detailed instructions here. But honestly, it’s easier just making this drink.

Just cut up fresh strawberries that are not over ripe. Add to the mason jar, fill with vodka and put the lid on. Store in a cabinet for a couple of days then strain and use.

Then you’ll have a special concoction you can use as your reward. Don’t forget you can infuse herbs, fruits and more to make your own signature flavor. Once you start playing with them you’ll be as hooked as me.

Serves: 1 serving

This simple and refreshing drink is made with fresh lemon juice, fresh mint, agave nectar and infused strawberry vodka.
  • Juice of 2 lemons
  • 6 fresh mint leaves
  • agave nectar, to taste
  • 1 shot strawberry vodka (home infused or store bought)
  • crushed ice
  1. Muddle the mint leaves in the lemon juice, then add 1 teaspoon agave nectar (you will adjust this to taste later).
  2. Mix in the strawberry vodka and taste. Is it too sour for you? Add more agave until it's just the way you like it.
  3. Strain into a glass of crushed ice and relax in your air conditioned house.
