Summer Raspberry Gin Cocktail

With autumn just days away I felt the need to squeeze in at least one more burst of summer into my drink menu. These sweet, juicy raspberries are muddled with thyme then mixed with gin to create a refreshing cocktail you don’t want to miss.

Okay, it’s not raspberry season, but these were on sale so I feel less guilty about it. These were perfect, ruby red juicy raspberries and I had to stop myself from eating them all while I was making my drink. I just couldn’t bear the thought of them going bad on the grocer’s shelf!

I love the juniper flavor from the gin and it really works well with the fresh thyme. My raspberries weren’t local, but I did use a local North Carolina gin called Cardinal Gin. This particular gin has some mild citrus and mint flavors too. If you can get it in your area you should give it a try.

Summer Raspberry Gin Cocktail

Serves: 1

  • 1 teaspoon fresh thyme leaves
  • 8 fresh raspberries
  • juice of ½ lemon
  • 1 to 2 teaspoons agave, to taste
  • 1 shot gin
  • 2 shots water
  1. Muddle the thyme and raspberries then add the rest of the ingredients. Serve with lots of crushed ice.
The ingredients are for 1 cocktail. You need to make them in individual glasses to keep all the good juice from the muddled raspberries right where it belongs.
