This jackfruit gumbo is spooky, delicious, and easy to make!
You want to buy young green jackfruit, or unripe. Ripe jackfruit is sweet & won't work in this recipe.
For the Gumbo:
– water – sliced okra, fresh or frozen – diced tomatoes – bell pepper – garlic – 1 can, young green jackfruit – vegan sausages, – vegan bouillon cubes – Cajun seasoning blend – 3 bay leaves
For Finishing & Serving:
– spinach, kale or other green – water – Cajun seasoning blend, – steamed rice, white, brown or forbidden – hot sauce
In the morning:
Add all the main gumbo ingredients to your 4 quart slow cooker. Cook on low 7 to 9 hours.
15 Minutes before serving:
Add the greens to a blender with a little water and purée until smooth.
Garnish with the green puree and steamed rice.
