It’s time for a new vegan menu plan and this time you’ll want to get out your slow cooker! This week’s plan has soups, stews, curries and more. Plus there’s even a vegan pound cake for dessert!

Tuesday: This Slow Cooker Vegan Bolognese is full of cauliflower, eggplant, mushrooms & carrots and makes a great meal served over pasta or whole grain toast. You can freeze the extra sauce in individual servings for a quick dinner anytime.
Wednesday: Jenn Sebestyen’s Red Lentil Stew with Chickpeas and Orzo is the whole package – beans, veggies, and pasta all in one satisfying bowl and less clean up for you.
Thursday: Smoky Vegan Split Pea Soup with Sweet Potatoes and Navy Beans is the comfort food you’re craving when you are only inches from the weekend. Pair with some homemade chickpea crackers and a nice green salad.
Friday: Quick & Easy Creamy Vegan Tomato Soup is a tasty recipe that takes almost no effort. It’s also made with ingredients in your pantry so you can whip up a batch anytime. Pair with some slow cooker pizza rolls that you can make earlier in the day if you only have one slow cooker.
Saturday: Healing Tomato’s Slow Cooked Vegan Lentil Curry is a great way to celebrate a night in. Pair it with some steamed brown basmati rice and a cauliflower potato curry or navrathan curry for a full Indian meal!
