Hi everyone! I hope you are getting a peek of spring green where ever you are. Here in North Carolina, it’s out in full bloom and I’m writing this from my favorite office – my back porch. I don’t know about you, but I’m dreaming of all kinds of vegan spring recipes full of strawberries, asparagus and baby greens.
Spring is managing to push its way out in my messy yard, that seemed to be all fall leaves and pine needles. The Carolina jasmine lights up the wooden arch in the front yard, and the daffodils survived the dogs digging in the beds to bloom again.
There are signs that the irises, day lilies, and gladiolas are still surviving my book deadlines. The yard is always the first thing I neglect when I’m overscheduled. So, I have those to look forward to once I’ve turned in the manuscript for my next book. The new book has been taking all of my time the past few months, but luckily, I seem to thrive on that kind of stress.
I love creating new recipes and being able to write up the book outside will make me so happy. Most of my past deadlines have been in the winter, where I’m trapped inside. It’s a treat to take a break and write to you while my tomato sauce is cooking inside.
What is my next book? You may have heard the rumors, I am working on a Vegan Instant Pot cookbook! It’s not available for pre-order yet, but I’ll keep you posted as that moves along. I have really enjoyed creating new recipes for the Instant Pot and am amazed every day at all the wonderful things that it does.
I’ve been putting some sneak-peek recipe photos from the book on Instagram. I’d love it if you want to follow along. I know it’s another social media account to add to your life, but it’s less distracting for me than Facebook.
My favorite thing about the warmer weather is opening up all the windows and as many doors as I can. It drives Cheryl batty to come home to a few bugs in the house, but the animals get to do as they please without bothering me. Of course, that’s to go in and out all day long.
