Autumn seems to be sneaking in more places. I know some of you are already into freezing temperatures, but I just happy that it’s not in the 90’s anymore. I know you’ll enjoy this week’s free vegan menu plan because it’s full of cool weather comfort food.
Monday: Nothing says comfort after a long day like coming home to this Slow Cooker Butternut Squash and Black Bean Chili. Set it up in the morning, and you’ll have dinner already cooked for you when you get home.
Tuesday: This Bánh Mi Scramble from The Complete Guide to Even More Vegan Substitutions will have your taste buds thanking you. It would make a great chilled salad in addition to a traditional hot scramble so you can savor its traditional Vietnamese flavors any time of the day.
Wednesday: Lentil Quinoa Bolognese Sauce from The Great Vegan Bean Book is a hearty meal perfect for the middle of the week.
Thursday: Quick and Easy Vegan Broccoli with Spicy Garlic Sauce Recipe from my book, The Easy Vegan Cookbook.
Saturday: Soothing and easy like the city that inspired its creation, the Cauliflower Po’ Boy Sandwiches from The Easy Vegan Cookbook are the perfect way to start your weekend!
Sunday: Vegan Ethiopian Recipes from Teff Love by Kittee Berns. Ye’tikil Gomen Be’karot is a mild cabbage, carrot and green bean stew and Quick Teff Crêpes are what you eat it with instead of utensils. 2 awesome Ethiopian dishes that you’ll want to make extra to have leftovers for lunch on Monday!
