I have a summer vegan slow cooker menu plan post, but I wanted to give you one for those weeks that you need meals to come together fast!
This vegan menu plan is perfect for a busy week and budget friendly too. Try making the Super Easy Avocado Chili Bean Veggie Burgers ahead of time and just heat them up when you want them. You can either freeze some of the extras or pack them for lunch in a sandwich or as a salad topper!
You don’t need an Instant Pot to make any of these recipes, but if you have one you can cook the potatoes for the Tempeh Potato Hash in it to save a little more time.

Monday: Start off the week easy with this quick and easy Avocado Lemon Basil Pesto. If you have any leftovers use as a spread for a sandwich piled with veggies and you have lunch for Tuesday already!
Tuesday: Everyone loves breakfast for dinner and they will really love this Tempeh Potato Hash. Keep your kitchen cool by making the potatoes in your Instant Pot – in fact, you can make the whole thing in there! If you don’t eat soy, substitute cooked chickpeas.
Wednesday: Get a midweek boost by eating an all veggie dinner. Thai Red Curry Vegetables are served over Sweet Potato “Rice”. The recipe calls for a frozen Asian veggie mix but feel free to use fresh garden vegetables instead.
Thursday: Make these Super Easy Avocado Chili Bean Veggie Burgers when you’re cleaning up on Tuesday or Wednesday and all you have to do is heat them up. You can also freeze the extras in buns for a grab and go lunch later on.
Friday: Celebrate the end of the week with some Sonoran Tacos from Vegan Tacos! Choose from beans, mushroom, or seitan for your filling and use soft corn tortillas to make gluten-free. I’d make some 7-layer dip as a side and something to snack on all weekend long.
Saturday: If you’re like me then you have tons of chores to catch up on and Saturday is the day to do them. Carrot dogs are the answer to a busy day dinner. Wake up, cook the carrots and marinade them. That way they are ready to cook when you want a break. Fancy them up with some Asian Broccoli Slaw.
Sunday: Treat yourself to a delicious Blueberry Whiskey BBQ Salad with Tempeh and Roasted Potatoes. Sunday nights are often about planning the week ahead, but before you do that give yourself a little quiet time, a glass of wine and an over the top dinner salad.
Dessert and/or Breakfast: This whole grain Blueberry Buckle is a great way to use up the rest of your blueberries and it’s oil-free too!
