There are hundreds of recipes for larger slow cookers that make tons of food. Sometimes it’s nice to make enough chili to last the whole winter, but other times I just want to come home to a different dinner every  night. You make these 6 Vegan Slow Cooker Recipes below in your small 1 1/2 to 2 quart crockpot.


There’s just enough for you and the person lucky enough to get invited to dinner. Or you can make them for yourself and have lunch for the next day!

Slow Cooker Bean and Oat Chili for 2 from Vegan Slow Cooking for 2

This Slow Cooker Bean and Oat Chili for 2 is so much fun to make. You put all the chili ingredients in the bottom of the slow cooker and top with a sweet potato. Each person gets half of the sweet potato with chili ladled over the top for dinner. If that’s not good enough, there’re oats involved too!
