The weather has been cold and dreary here in Durham and I have loved every minute of it! It finally feels like fall. I’m looking forward to seeing the leaves change and wearing sweaters again. Not to mention creating recipes that are full of apples, pumpkin and butternut squash.
I have a roundup of apple recipes for you to enjoy over the weekend and beyond. Apples in biscuits, kugel, cake bars, creamer, muffins and, of course, an oatmeal.
These are the biscuits I’ve been craving since the weather has gotten cooler. Autumn Cinnamon Apple Biscuits are easy to make, delicious to eat, plus they’re full of whole grain goodness.
Any time is a good time to have some noodle kugel. This one has apples, cashew cream, a date caramel, walnuts and is gluten-free with homemade quinoa-flax noodles!
These Apple Walnut Bars are made with whole grains and a little apple brandy to help you celebrate fall! Grab an apple bar, a Maple Spice Hot Toddy, your sweater and sit on the deck and watch the leaves fall.

Muffins are a great way to use leftover and a little too ripe fruit. Even if you don’t have any fresh fruit at all you can add in nuts and dried fruit you may have in your pantry instead. Thanks Kathy, I pinned a few of these. Could the quinoa flour be replaced with AP or ww pastry since I’m not GF?

You should be able to use whole wheat or white flour. It may need a little less water. You can also use dry pre-made noodles and cook them.

I’m new to the slow cooker and hope someone can answer my question. I’ve tried a couple of recipes from The Vegan Slow Cooker. I’m currently waiting for a batch of Chick’N Marsala to finish. It has 2 hours and 21 minutes to go (sigh). It smells good and from the looks of it, I’d swear it was done. Does it really have to cook so much longer? I understand that the long cooking times are convenient when you want to start your meal early in the day and have it ready for an early dinner. Is that the only reason the dishes cook so long? Is the food edible an hour or two earlier?

In most recipes the dishes can be eaten a few hours early or even a few hours later. As long as the sauce taste the way you want I’d go for it!
