Here’s my second post on the joys of summer slow cooking. If you missed the first one, you can read it here. I’ve got summer slow cooking on the brain! This time we’ll look at main dishes.
One dish meals are awesome to come home to. They are convenient when you’ve had a long, hard day. There’s no need to rush around or think about what to make. It’s ready and waiting for you – all you have to do is ladle dinner into your favorite bowl, find yourself a shady spot outside or a cool one inside and now you can officially have time to enjoy summer.
I like to wash some salad greens and cut up some farmers market fresh veggies for a side salad to go with my main dish. It’s even better if you do it the night before to make it easier after work. All you have to do is toss it with your dressing once you get home. Feeling a bit pleased with yourself is not a bad pay off for a few minutes of work the night before.
Indian Spiced Chickpea Quinoa Stew is full of spices, chickpeas, and veggies. Plus it’s easy to make too. If you think slow cooker food all tastes the same, try it or Mexican Quinoa with Black Beans. They both have bold flavors that can give the middle of the week a boost.
Sometimes these aren’t quite the one dish meals they promise. For instance, you still need to make some rice for the Slow Cooker Pineapple Chick’n, but a rice cooker won’t heat up your house either. If you’re lucky, yours has a timer so you can set it to be ready when you get home. (Plus rice also goes nicely with a tiki glass full of mai tai or a juice mocktail!)
