Refreshing Summer Watermelon Ricky Watermelon is one of the best parts of summer. Next time you have one try making watermelon drinks instead of cutting a big slice like you always do.  If you buy a full-sized watermelon you’re going to have a ton left over and it can be a little problematic to store if you already have a fridge full of summer fruits and veggies. This gives you a compact way to enjoy your watermelon!  Refreshing Summer Watermelon Ricky  The easiest and most portable to use up the watermelon you have is to make watermelon juice. This sounds much fancier than it is.  It’s so simple and easy – just add cut up watermelon into your blender and blend as smooth as you can, then strain it through a fine mesh strainer. This removes the fibrous pieces and leaves you with watermelon juice. Ta-da!  Refreshing Summer Watermelon Ricky  Now that you have a pitcher of deliciously refreshing watermelon juice you might as well up the ante. That’s where the lime and sweetener come into play.  Mix in the juice of 2 limes and lightly sweeten with liquid stevia, stevia simple syrup or sweetener of your choice. I would definitely sweeten to taste since one watermelon could be sweeter than another.  You could also add some fresh mint or lemon balm to the blender with the watermelon chunks. I did not use it in mine because I wanted the botanicals in the gin to shine through. But if you’re drinking it plain or with vodka the herbs would be fantastic! RecipesCookbooks Print recipe Yield: 6.00 servings Prep time: 15 minutes Cook time: 15 minutes Simple to make and with watermelon juice, lime juice and a light sweetener it is the perfect summer mocktail. Or add a little gin for your new favorite cocktail!  Ingredients  6 cups seedless and peeled watermelon chunks 2 limes 8 drops liquid stevia or 2 small packets (or sweetener of your choice, to taste) 1 ounce of gin per serving, optional Directions  Add the water melon to a blender and blend well. If you have a high speed blender it will take about 1 minute, but if you have a less powerful one it could take 3 to 4 minutes.  Strain through a fine mesh strainer into a bowel with a pour spout. Pour into a serving pitcher.  Add in lime juice and stevia, stir and serve. You can garnish with a lime or watermelon slice.
