Slow Cooker Orange Fig Pecan Oatmeal

I love orange flower water and once I got my hands on a bottle I was hooked. It has a very delicate, sweet, floral fragrance and a delicious taste when used sparingly. If you use too much you’ll feel like you’re eating perfume.

If you can get to a Middle Eastern Store it’s surprisingly cheap, so get yours there if you can. You can always order it online if you don’t live in the city. You can make your own if you have orange trees that aren’t sprayed. I live in North Carolina, so no orange trees for me.

Slow Cooker Orange Fig Pecan Oatmeal
soy-free and gluten-free
2 to 3 servings

**This recipe uses a smaller slow cooker 1 1/2 to 2 quarts

  • 1/2 cup (40g) steel-cut oats
  • 2 cup (500ml) Unsweetened So Delicious Coconut Milk
  • 1/2 cup (75g) dried figs, chopped
  • 1/2 teaspoon orange extract
  • 1/4 teaspoon orange flower water (food grade)
  • sweetener of choice, to taste (I used 1 packet Nu Stevia)
  • handful pecans, for topping

The night before: Spray your crock with some oil to help with clean up later. Add the oats, milk, figs, and orange extract. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well and add orange flower water and sweetener. It may seem watery at the top but if stirred it should be a more uniform consistency. Top with the chopped pecans.

Slow Cooker Orange Carrot Cake with So Delicious “Icing”

So for the first time in my brief, but intense, oatmeal career I am asking you to do something different from the picture. My vanilla Greek yogurt has met a sad demise and I didn’t know until this morning. (Feel free to leave your sympathy posts here.)

So I used what I had on hand – Pina Colada regular So Delicious yogurt. It’s not horrible with the carrots and orange, but it does clash some with the cinnamon. It would be so much better with vanilla yogurt, and the Greek yogurt would make it taste just like cream cheese icing.

So, please do as I say and not as I do in this case. You’ll be really glad you did.

This oatmeal is flecked with carrots and tangy from the orange juice. You need the tart from the yogurt and a little vanilla to finish it off. Carrot cake for breakfast? I think so!

Slow Cooker Orange Carrot Cake with So Delicious “Icing”

soy-free and gluten-free
2 to 3 servings

**This recipe uses a smaller slow cooker 1 1/2 to 2 quarts

  • 1/2 cup (40g) steel-cut oats
  • 1 cup (250 ml) OJ (orange juice)
  • 1 cup (250 ml) water
  • 2 carrots, chopped
  • 1/2 teaspoon cinnamon
  • sweetener of choice, to taste (I used 1 packet Nu Stevia)
Toppings:
  • 1 container Vanilla So Delicious Greek Yogurt (or regular So Delicious Yogurt)
  • 1/4 cup (30g) walnuts, chopped

The night before: Spray your crock with some oil to help with clean up later. Add all the ingredients except the sweetener and toppings. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well and add sweetener. It may seem watery at the top but if stirred it should be a more uniform consistency. Top with a large dollop of vegan yogurt and walnuts.

Slow Cooker Strawberry Orange Mint Oatmeal

I don’t know about where you are, but we can finally get local strawberries here in NC. I love them in everything from smoothies to salads and, of course, oatmeal.

If you are using frozen or not-so-ripe strawberries you may need to add a little extra sweetener. But if you’re lucky they’ll be so sweet that you may need no sweetener at all!

Slow Cooker Strawberry Orange Mint Oatmeal

2 to 3 servings

**This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts

  • 1/2 cup steel-cut oats
  • 1 1/2 cups water
  • 1/2 cup chopped strawberries (fresh or frozen)
  • 1 teaspoon orange extract
  • 1 – 2 tablespoons sweetener
    (I used agave)
  • 1/2 to 1 teaspoon orange zest
  • 1 teaspoon fresh mint, chopped (I used orange mint in the oatmeal, but garnished it with pineapple mint.)

The night before: Spray your crock with some oil to help with clean up later. Add everything except sweetener, orange zest and mint. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency.  The berries will have floated to the top of the crock. Just smash them a little with the spoon while you’re mixing the pot to incorporate them into the mix. Stir in sweetener, orange zest and mint.

Slow Cooker Mango Margarita Oatmeal – It’s 5pm Somewhere, Right?



Ok, before you get the wrong idea there is no tequila in this oatmeal. Even on my worst days I would not bring in alcoholic oatmeal to work. But it is Monday and the first work day after daylight savings time is always a little tough for me. So I thought I’d start my day with a ‘special drink’ oatmeal

In the evening when I get home I must have a ‘special drink’. I define a special drink as one I haven’t been drinking all day. (Who says I’m not a simple gal?) It doesn’t need to be alcoholic and even an orange sparkling water in a wine glass will do. I love margaritas of all kinds but a mango margarita is one of my favorites. So, this was a prefect choice for a day that I really wanted to stay at home. It is Spring after all!

This oatmeal gets its Triple Sec taste from orange extract, the bite of lime from the lime zest, and the mango came from the freezer section at Trader Joe’s in a packet as purée. If you don’t have orange extract you could substitute the nondairy milk with 1 cup water and 1 cup orange juice. Do not use OJ with the milk or it will be curdled and very unpleasant to wake up to.

I use organic extracts that usually don’t have alcohol, make sure you’re at least using natural extracts or you won’t be happy with the tastes.

Slow Cooker Slow Cooker Mango Margarita Oatmeal

2 to 3 servings

**This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts

  • 1/2 cup steel-cut oats
  • 2 cups Unsweetened  So Delicious Coconut Milk
  • 1 teaspoon orange extract
  • 1/2 cup mango purée (1 small packet of Trader Joe’s frozen contained this amount)
  • 1 – 2 tablespoons sweetener
    (I used agave)
  • 1/2 to 1 teaspoon lime zest (to taste)

The night before: Spray your crock with some oil to help with clean up later. Add everything except for the agave and lime zest. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency.  Stir in sweetener and lime zest.

Slow Cooker Creamsicle Oatmeal – Orange Vanilla Goodness

Welcome to day 2 of love your oatmeal week! The taste of orange and vanilla together bring back childhood memories of hot summer afternoons. You can almost feel the sticky on your hands from your melted push-up if you close your eyes. Why did those things always leak anyhow?

Creamsicle Oatmeal

2 to 3 servings

**This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts

  • 1/2 cup steel-cut oats
  • 2 cups orange juice (use low acid if you have a sensitive stomach)
  • 1 teaspoon vanilla extract
  • 1 – 2 tablespoons sweetener
    (This will vary on the sweetness or sourness of your OJ)
  • For serving: finely grated orange zest and the scraped insides of 1/3 a vanilla bean
  • So Delicious Coconut Milk (Unsweetened or Vanilla)
    (Use less sugar if you’re going to use vanilla coconut milk)

The night before: Spray your crock with some oil to help with clean up later. Add everything except sugar and for serving ingredients. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency.  Stir in sweetener and vanilla paste scraped from inside of a whole vanilla bean.

Top each serving with orange zest and mix in some Vanilla So Delicious Coconut Milk. I was worried that it would curdle in the OJ, but I’m eating a bowl with it now and it worked great. If you’re having doubts, try adding a tablespoon coconut milk to a few tablespoons oatmeal first. That way if it doesn’t work for you all is not lost!

(I also tested it with So Delicious Coconut Creamer and it worked fine too.

Slow Cooker Citrus Black Bean Soup

This soup is a great start to a dinner party. I don’t know about you, but before slow cooking I used to spend too much time in the kitchen at my parties. Using my slow cookers means I can hang out with my friends more. Now I even have enough slow cookers to make all the dishes for a dinner party!

Keep an eye out at thrift stores and yard sales to collect a few of your own. I got a Crockpot trio for my birthday this year and it’s awesome. If you live in a small apartment though,  you might want to skip it. It’s pretty huge and a pain to store.

Slow Cooker Citrus Black Bean Soup

Prep time: 10 minutes
Cooking Time: 8  hours

  • 1 lb dried black beans
  • 1-15 oz canned fire roasted diced tomatoes
  • 2 cloves garlic, minced
  • 1 Tb. Jerk Seasoning
  • 1 tsp cumin
  • 1 tsp chipotle powder
  • 1 Tb. Liquid Smoke
  • 1 tsp garlic Tabasco (garlic Tabasco is less hot than regular)
  • 1 lime, juiced
  • 1 orange, juiced
  • 1 Tb fresh cilantro, chopped

The night before: Put the dried beans in the slow cooker and add water until it’s about 3 or 4 inches above the beans. Cook on high overnight.

In the morning:  Turn the slow cooker to low. If the beans are too watery remove some of the liquid. Add the rest of the ingredients and cook on low for about 8 hours. Taste before serving and adjust spices as needed. Puree or not depending on your preference.

Top with more fresh cilantro and a tsp. of salsa.
