Not Your Usual Potato Salad – Indian Spiced with Chickpeas!

This goes way beyond the mayo or mustard potato salads of our childhoods. This one is in an Indian spiced yogurt sauce. And it’s packed with chickpeas, tomato and cucumbers!

This is a an easy make-ahead dish that will impress your guests. I’ll be taking a double batch of it this weekend on our annual Labor Day camping trip. The only thing that will top it is sitting around the fire with a cocktail!
