Looking for a few snacks to have on hand for the spring parties in your future? This is the post for you. There are actually 4 new things in Earth Balance’s new snack line, but you will only get to see three on this post.

Yes, I had all four to begin with. The white cheddar vegan popcorn is crazy good so I don’t feel entirely responsible for eating it before I could take a picture. The people at Earth Balance need to accept their part of the blame since they created this addictive cheesy popcorn that tastes just like the real thing. I even double checked the label after my first bite in case I grabbed the wrong bag at the store!

Earth Balance's P. B. Popps

Second on my list, but really just as good as the cheese popcorn is the P. B. Popps. These are amazing! Rich, peanut butter flavor smeared over crunchy, light popcorn with flecks of toasted oats. Make sure to eat all the covered peanuts that sink to the bottom of the bag – they were Cheryl’s favorites.

All I can say is the P.B. Popps is a popcorn revelation for me. Next time I’ll put them in single servings so I don’t get quite as carried away as I did on my first bag…

Vegan buttery popcorn – the name says it all. This tastes better than movie popcorn ever could. I really liked the flavor and I think you will too. It is cheaper to pop your own at home, but this could be the best road trip food ever!

The Vegan White Cheddar Puffs were my least favorite. The flavor was excellent, but the puff was very dense. I’m used to my beloved Tings that are much lighter in comparison. It’s a personal thing so maybe the Earth Balance ones will be your favorite.

Slow Cooker Buttery Pancake Oatmeal – A Perfect Excuse for Maple Syrup

A funny thing happened when I made this oatmeal and sent it off with my picky eater. First off, realize that all this fancy oatmeal doesn’t go over great. (Though I have the advantage because she’s hungry in the morning and eats most of it anyhow.) Pancakes are some of her favorite breakfast food, so I though this would be a welcome break for her taste buds. After all I’m adding Earth Balance, cinnamon, and maple syrup – surely she won’t complain about that.

Here’s how the conversation went:

Me: How was your oatmeal today?
Picky: I think it tasted kinda plain.
Me: But I put vegan butter in there!
Picky: Really? I didn’t taste any…
Me: I added an extra tablespoon to your thermos…
Picky: Hmmm…

Now before you skip over this one, I liked it and will be making it again. The hint of buttery flavor with the maple syrup reminded me exactly of pancakes. It isn’t as complex as the Hummingbird Cake, but you can fancy it up with some fresh berries.

Slow Cooker Buttery Pancake Oatmeal

2 to 3 servings

**This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts

  • 1/2 cup steel-cut oats
  • 2 cups Unsweetened So Delicious Coconut Milk
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla

topping:

  • 1 – 2 tablespoons maple syrup
  • 1/2 teaspoon Earth Balance

The night before: Spray your crock with some oil to help with clean up later. Add everything except maple syrup and Earth Balance. Cook on low over night (7 to 9 hours).

In the morning: Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency.  Stir in maple syrup and Earth Balance and top with an extra sprinkle of cinnamon.

Celebrate St. Patrick’s Day with Green Mashed Potatoes

Ok, you and I know both that these are just mashed potatoes with puréed spinach. I have fancied them up with some Unsweetened So Delicious coconut milk and some smoked salt. But with St. Paddy’s day just around the corner it’s a perfect way to dress up tomorrow’s dinner. (Don’t panic the “beef” in the pic above is Gardein‘s vegan beefless tips.)

To make the cooked potatoes in the slow cooker use the Slow Cooker Beyond Easy Baked Potatoes. Once they are done (they can cook all day while you are at work), make sure to use a clean pot holder to handle the cooked potatoes with since they will be really hot then split them open and scrape the flesh out into a bowl.

This isn’t a slow cooker recipe if you boil your potatoes on the stove, but either way they are great for St. Paddy’s Day!

Green Mashed Potatoes

Serves 3 to 4

  • 1/2 cup Unsweetened So Delicious coconut milk
  • 2 cups fresh baby spinach
  • 2 large cooked potatoes, peeled
  • 1 to 2 tablespoon(s) Earth Balance
  • smoked salt, to taste (or 1/4 teaspoon liquid smoke and plain salt)

Puree the nondairy milk and the spinach in a blender until smooth. No matter how you cooked your potatoes transfer the insides (no peel) to a bowl and mash the potatoes. You can use a mixer after you add the liquid and Earth Balance, just make sure not to over mix or they will get gluey. Mix everything together.

Note: If the mixture is too thick make another spinach coconut milk batch and add it to the mixture as well.
