Pineapple Mint Agua Fresca

Agua Fresca is a traditional Latin American drink made of fruit, water, and a sweetener. It reminds me of the sweet and fruity drinks I had as a kid, only agua fresas are made with the real thing!

With my agua fresca, I skipped the sweetener and used mint to add a hint a sweetness instead. You can use the sweetener of your choice, to taste if yours still tastes too tart for you.

Pineapple Mint Agua Fresca

Serves about 6 cups     adjust servings

This refreshing drink can be made with any fresh fruit you have on hand. You can also strain it if you don't enjoy the pulp.

Ingredients

  • 3 cups pineapple chunks
  • 3 cups water
  • 25 mint leaves

Instructions

  1. Place all the ingredients in your blender and blend until smooth. If you don't have a powerful blender you may want to strain out the pulp.
  2. Serve over ice or cold or both!

You can try this with different fruits and herbs. The pineapple mint agua fresca would also be a great base for a grown-up rum cocktail.

    I love all your cookbooks and blogs! Is the Instant Pot the same as a pressure cooker? Just wondering if I can isr your newest cookbook with my pressure cooker??

      The Instant Pot has an electric pressure cooker in it. The recipes should work in any electric pressure cooker, but might need to be modified for a stove-top pressure cooker.
