I hope you don’t mind a cookbook topic suggestion. There are so many vegans in Asia, why not write an Asian-vegan cookbook? As far as I’m concerned Asian dishes are the best in the world, with Indian topping the list. If you write it, I will buy it!

I never mind suggestions! I’ll put it on my books to write list.
There are some good easy Asian recipes in my newest book, The Easy Vegan Cookbook.

I have enjoyed your cookbooks as they offer vegan food with oil free options. If you ever decided to write an Okara cookbook I would be one of the first customers for that!

I’m glad you’ve found my cookbooks helpful! I will put that one on my future book list 😉

I hope my question doesn’t show my ignorance, but have you written a cookbook about using pressure cooker? I’m talking about one that’s used on the stove, not plugged in. I recently purchased a Fagor 6 QT. pressure cooker. I was really disappointed it didn’t come with a cookbook. It came with a dvd, but that featured pretty much all SAD recipes. I THOUGHT OF YOU! Any chance you have created a work of magic that will make me look like I know what I’m doing?!
Thank you,
Marcia

I saw in one of your blogs you’re working on an instantpot cookbook. Is this going to be a hard copy book or an ebook? When do you think this is going to be available? I’m waiting!!!
Kathy Hester says
It should be out Jan 2017 and it is coming out from Page St. Publishing. It will be available in paperback and ebook!

After having tried few of your recipes from the website (these being a delicious success) I’ve just bought The Healthy Slow Cooker cookbook as I want to make the most of my Instant Pot by also using the Slow Cooker mode.
Having said that, in this case I was wondering if the “Cheesy Broccoli Rice” recipe from the mentioned book can be adapted for High Pressure Cooking? If so, could you tell me how please?
Many thanks!

I’ve tried the recipe in the ‘slow cook’ mode of my instant pot today… Total and utter disaster… :'(
I halved all the quantities of the ingredients, as it’s only me, my partner and my toddler.
I followed all the instructions accurately.
When 1h 30min was up, I opened the lid and there was no liquid left! it had already been soaked up, the rice was nearly cooked. So, what did I do? I added a little more water along with the broccoli florets, hoping for the best… I set the time for 30min more… Didn’t work:broccoli wasn’t cooked… 15min more…broccoli would still not cook and rice was overdone… In the end I took the florets out and chuck them in the steamer. Served the overcooked rice with the steamed broccoli on top.
So disappointed… What do you think were the problems here? What can I do for the next time?
Many thanks for your help. I’m a ‘newbe’ with instant pot and slow cooking…
Kindest regards.

Can you tell me which recipe you were trying? I’d be happy to help you troubleshoot.

Hello Kathy,
My 2 posts were about the “Cheesy Broccoli Rice” recipe from your book.
Thanks

I haven’t made it in the pressure cooker yet. I would probably cook the rice first, then add in the rest and cook a minute or 2 more.
