Mardi Gras has snuck up on me. It’s not much of a thing where I live in North Carolina, but I did live in New Orleans for 12 years and it still feels weird to work on Fat Tuesday. Since I didn’t partake in all the veganized New Orleans goodies that I usually do, I thought we should have a whole week to celebrate with our dinners!

Monday: The first day of the work week are red beans and rice days in New Orleans.The Vegan 8’s Cajun Red Beans and Rice Veggie Burgers are a great twist on that New Orleans tradition. I’d recommend making a Tabasco vegan mayo to top these with.
Tuesday: How about a healthier version of a New Orleans classic? My Cajun French Fry Po’ Boy with Vegan Mushroom Gravy will hit the spot, and the fries are baked!
Wednesday: Connoisseurus Veg created this Vegan Jambalya. It is a delicious vegan variation packed full of kidney beans and veggies.
Thursday: Cauliflower turns into magic when you batter it up, bake it, and make my very favorite Cauliflower Po’ Boy Sandwiches!
Sunday: Strength and Sunshine created this One-Pot Cajun Pasta is a dish flecked with veggies and Cajun-inspired flavors.
