It’s interesting that 3 of them are slow cooker recipes. The banana pudding, which is cooked on the stove-top, was super popular and has even been re-pinned a lot this winter!
This Scrambled Tofu Breakfast Burritos recipe is from my book The Vegan Slow Cooker for Two or Just You. All you need to do when you wake up is to heat a tortilla and wrap up your not-scrambled tofu. It’s a portable breakfast that you don’t go through a drive-thru to get.
These beany sloppy Joe’s are also from Vegan Slow Cooking for Two. This is a great meal to come home too. Just toast a bun and ladle over some of this nutritious stew.
You have to try this Root Veggie Barley Risotto, it’s also from The Vegan Slow Cooker for Two or Just You. The great thing about barley is that it can cook in the crockpot all day. You could try oat groats to make a gluten-free version, but it will be a little stickier.
I think this banana pudding was one of my biggest Pinterest surprises. Everyone went crazy for it and to me it’s one of the easiest recipes all year. Mental note – pin more easy recipes!
