This is not only a spooky dessert worthy of a campfire, it’s quite gruesome too. If you have kids (or grownups) that love gross things they will love this, because it’s meant to be a horror-worthy end to your Halloween meal!
In all honesty it’s a simple and even wholesome chocolate dessert that’s simply made with chocolate chips, coconut milk, sweetener, vanilla and forbidden black rice. It cooks in your slow cooker and thickens up a ton in the fridge.
Mine was very runny before I put it into the fridge and came out in a super-thick mousse. To make it thinner I recommend using less rice, but again don’t be nervous that it’s not set up at all before you put it in the fridge.
You could take out some of the gruesome by either leaving out the chocolate chips and adding a sweetener of your choice to taste, or make a vanilla pudding or use white rice instead of black. Think of this recipe as a starting point for your own custom Halloween pudding. You could leave out the chocolate chips and use 1/2 cup pureed pumpkin instead.
Gruesome Forbidden Rice Halloween Mousse
- 1 (14 ounce) can full fat coconut milk
- 1/4 to 1/2 cup forbidden rice (use less to make pudding instead of mousse)
- 1 teaspoon vanilla
- 1/2 cup chocolate chips
- In a 1½ to 2 quart slow cooker add all the ingredients and cook on high for 2½ to 3 hours. It will still be runny and the black rice will not be as soft as white rice would be in the pudding - it will be more al dente.
- Put in the fridge for at least 6 hours.
