Cara Lyons of Cara’s Cravings is giving out the recipe for Almond and Great Northern Bean Fondue from Vegan Slow Cooking for Two. She has an incredible recipe of hers for Roasted Cauliflower and Winter Squash Salad with Arugula and Pomegranate Seeds that I recommend you make. The fondue and salad make the perfect autumn meal!
All of what comes next is not for my gluten-free friends, but I promise to put up the recipe for the green cauliflower cilantro rice soon. It’s not really rice at all – it’s all made of cauliflower!
I love quesadillas. A perfect weeknight food that comes together in minutes using whatever you happen to have on hand. I also love seitan and while I love to make my own, sometimes it’s nice to have an emergency stash in the fridge. That’s where this review comes in.
Sweet Earth Natural Foods sent me a package of goodies to try and while all of them were tasty, the chipotle was my very favorite. Which I’m sure comes as no surprise knowing my love of all things smoky.

And here it is in my dinner with some refried beans and some salsa. The texture of the seitan was perfect next to the crisp flour tortilla.
