I love Kristina’s blog, Spa Bettie, and am so excited to have her introduce one of my favorite recipes – Pumpkin Coconut Caramel Sauce. This is a  must-make recipe to go along with fall. You know it’s time to start the pumpkin craziness!

This is one of my favorite all-time recipes. In fact when Renee Comet and I were working on the photos for the beans book our glasses were always full of iced coffee mixed with almond milk and this taste-of-fall pumpkin spice sauce. It’s very rich and it does have sugar in it. You can try using different sweeteners, but it may not thicken up as much.

Use it in place of date caramel sauce in oatmeal, coffee and it’s even good spread on a piece of toast or spooned on some vegan vanilla ice cream. You’ll be making a new batch before you know it!
