Joanne Bruno of  Joanne Eats Well with Others  joins the blog tour and ends the week with the recipe for Black Eyed Peas and Grit Cakes. She has a great 4th of July recipe roundup so make sure to take a peek at that too while you’re there.

Joanne shows you that you can use just about any bean you have on hand in this recipe. I’m all about using up what you have and she uses red nightfall beans she got at RanchoGordo.com. My favorite bean to substitute is Yellow Eyed Beans and you can get them at Rancho Gordo too!

The fun part about grit cakes is that you can cut them in any shapes you want. I like to use cookie cutters to cut out Halloween shapes for my annual Gothic dinner party.

Have a great holiday weekend! I have some new summer recipes coming up for you in the next few weeks.
