Today we’re off to visit Angela at Canned-Time.com who gives you the low down (and recipe) for Ginger Red Bean Popsicles from The Great Vegan Bean Book . I met her online this year and she’s a wonderful blogger and photographer. Not to mention a huge supporter of the vegan blogger community – oh yeah, she makes some amazing recipes herself too!

You may be thinking to yourself – why beans in sweets? Well red bean paste is a traditional Asian sweet filling in candies, steamed buns and even ice cream! I always thought it would be hard to make at home but it’s as easy as making refried beans. I added in a coconut milk base with ginger to ease you into your new relationship with red bean paste. Once you have the paste made these can be made in minutes, same with the red bean filled mini muffins.
