Today we’re off to visit the beautiful blog of Livvy – 86lemons.com. From her wonderful blog design to the mouth-watering photos it’s a feast for the eyes. But don’t worry, she has plenty of recipes your taste-buds will appreciate too.

I didn’t know Livvy wasn’t a re-fried bean fan until I read her post this morning. I was sweating a little as I kept reading her post. Luckily for me the Butternut Squash Frijoles recipe she’s sharing today changed her mind. She liked them!

Livvy also tells you how to make your own puree by baking the squash. I’m still a lazy fan of the slow cooker method of cooking pumpkin and winter squash, but you should use what ever works best for you – even if that means using canned. There are directions to cook these in the slow cooker or on the stove. It’s all about the options!

Lots of the recipes in the book have fancy heirloom beans suggestions, but inexpensive beans that you already have in the pantry are perfect for refried beans. The mushier the beans get the better because it means less smashing work for you!
