Monika wrote the gluten-free biscuit recipe in The Great Vegan Bean Book and I’m so grateful for her creative gluten-free baking skills. Her recipe has gotten rave reviews and she also shares her special gluten-free flour blend in the bean book. My friend Dawn says it reminds her of Popeye’s biscuits when she made them with coconut milk.
