This is a great quick and easy meal. It’s even better if you make the bean veggie mixture the night before. Then it only takes a few minutes to wrap them up and pop them in the oven. It’s soy-free and can be made gluten-free by simply using gluten-free tortillas. There’s a no added oil option too if that’s a dietary restriction for you.
I’m always sneaking in greens anywhere I can and you can sub kale, collards or your favorite green in place of the arugula. I like to serve steamed brown rice mixed with salsa verde and chopped cilantro on the side to make it a complete meal.
