Boma Loves Vegans!

Last weekend I was at Food Blog Forum in Orlando and it was held at Walt Disney World. I love this conference and get so inspired being there. This year I even sandwiched in a much-needed vacation around the conference.

I apologize for the photos – it was not only dark in the restaurant, but they had orange-red light coverings. But  this meal and chef were too awesome not to share, even with bad photos!

Our favorite Disney World restaurants are at the Animal Kingdom Lodge resort – Boma and Jiko.  I’ll be posting about our Jiko experience later –  they even have a separate vegan menu.

Boma has at least 3 chefs at a time in the kitchen just to work with people with allergies or special food needs. Matt Tyre is the one who loves cooking vegan and we were lucky enough to be there when he was working. He also loves cooking with peppadew peppers and looks much cuter than the picture above.

Boma is actually a buffet, so Matt came out and walked me through the line to point out what was vegan. He even offered to make me some fresh hummus, but I was fine with taking a few nibbles from the line while he went back into the kitchen to make me an appetizer.

The rest of my meal he whipped up in the kitchen and hand delivered it to the table. It would be impossible to get better service between him and our server. First he made me some fresh poppadoms served with warm olives – marinated in oelek sambal and peppadew peppers. They were spicy, salty and the perfect thing to serve with the cumin seed poppadoms.

For my main course I had the most fabulous stew. It had a coconut milk and tomato base that was full of different kinds of bean and nuts. Matt’s signature peppadews spiced the stew up and it was my favorite part of my meal. The broccolini was great as was the bean side dish.

It may not look like it, but it was so hearty I couldn’t finish it all. Next time I won’t fill up as much on poppadoms! The dessert was beyond all my expectations.

Matt brought me a huge plate with a berry sorbet, a peppadew pepper sorbet (it was nice and spicy), fresh berries and a special warm sauce to pour on my vanilla tofutti. (I know it had a fruit in the sauce and it might have been papaya).

I just want to Thank Boma and Matt for one of my favorite meals of my vacation. You really made our night special!
