Slow Cooker Apricot Almond Oatmeal

Happy Friday everyone! It seemed like today was never going to come this week. I finally made a Facebook page for this blog, so go over to the new Healthy Slow Cooking fan page and like it to receive updates and links of interest.

This oatmeal has a hint of spice with an earthy undertone of almond, that’s brightened up with the slightly tart and sweet taste of the dried apricots. My apricots were not as sweet as others I’ve brought home in the past, so I added the full amount of sweetener.

Slow Cooker Apricot Almond Oatmeal

Serves: 2 to 3 servings

**This recipe uses a smaller slow cooker that's 1½ to 2 quarts
  • ½ cup steel-cut oats
  • 2 cups Unsweetened So Delicious Coconut Milk
  • ⅓ cup dried apricots, chopped
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon ground cardamom
  • ⅛ teaspoon ground cinnamon
  • 1 - 2 tablespoons sweetener (I used agave)
  • For serving: slivered almonds
The night before:
  1. Spray your crock with some oil to help with clean up later.
  2. Add everything except sweetener and almonds to the slow cooker.
  3. Cook on low over night (7 to 9 hours).
In the morning:
  1. Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency.
  2. Stir in agave or other sweetener. Top each serving with 1 teaspoon of slivered almonds and extra chopped apricots to make it pretty.

    Mmm … I love apricots and anything with cardamom! Did you read how I lost the bag of apricots I brought home last weekend? They still haven’t turned up! So sadly, I’m going to have to get some more before I can make this one! Thanks for sharing! Happy Friday to you!
